As Chef Michael Smith is a celebrator of the local, the event is taking a page from his book and showcasing local beer, wine, cheese, ice-cream and APPLE PIES! Also, a chili cook-off will be happening with none other than YOU as the judge. Also, get a chance to meet and greet with the great chef himself, learn how to oyster shuck, see a presentation, and get your latest cookbook signed. This tasty event is not only delicious, but kind-hearted with proceeds going to support Bethany's Hope (leukodystrophy research). So go out and get your tickets, before they are gone! RECIPE SELECTION: Chef Michael Smith's Spicy ChiliInstructions Heat a large pot over medium-high heat and add bacon. Add a splash of water and let the bacon render it’s fat. As the water evaporates, the bacon will brown. Pour off excess fat and add the onions, garlic and peppers. Cook until they are softened and just beginning to caramelize. Add chili powder and ground beef and stir well, chopping the beef up with a wooden spoon. Add tomatoes and beans and season with salt and pepper. Simmer for an hour. If you have a chance, make this a day in advance and reheat when needed. The flavours will brighten and meld as it rests overnight. Link to more amazing recipes here! Links to help you out:

I would like to make this chili. However, could you specify what exactly is a spoonful? Tablespoon or teaspoon? Also: Which red peppers? Thank you.
