baked pumpkin seed recipe
Ingredients:
- 3 tablespoons of salted Butter (Use Coconut oil for substitution)
- 3 cups of dried pumpkin seeds
- 2 teaspoons of ground cinnamon
- 4 tablespoon granulated sugar
- 1 teaspoon of salt
- ½ teaspoon of pure vanilla extract
Directions:
- Preheat oven to 325℉.
- Make sure to wash off all pumpkin guts and lay on a baking sheet lined with a paper towel. Allow to dry completely, ~24h, change paper towel at 12 hour mark.
- Begin by combining the dry ingredients in a small bowl.
- Melt the butter in a microwave safe dish. Mix in vanilla and add mixture into a large bowl with the pumpkin seeds. Stir. Make sure the seeds are evenly coated with the mixture.
- Then, add the dry mixture to the coated pumpkin seeds and stir to coat.
- Spread coated pumpkin seeds on lined baking sheet
- Bake for 25-35 minutes, stirring every 10 minutes, until seeds begin to brown.
- Enjoy on their own or with yogurt and granola!
